  1. Simmer 500 ml coconut milk, 180 g brown sugar, ¼ tsp salt in a wide pan 15 minutes until slightly thickened.

  1. Fold rice into coconut mixture and stir over low heat 10–15 minutes until sticky. Press into a lined dish; cool 30 minutes and cut. Refrigerate promptly.
