  1. Simmer 700 g chicken thighs, 200 g onion, chopped, 30 ml olive oil, 1 tsp ginger, 1 tsp cinnamon, 300 ml water, ¾ tsp salt covered 30 minutes to 74°C / 165°F; shred meat and reduce liquid. Stir eggs and parsley from 3 eggs, 30 g parsley, 120 g toasted almonds, chopped, 30 g sugar into hot juices until set.

  1. Heat oven to 190°C / 375°F. Butter and layer filo from 250 g filo pastry, 80 g melted butter in a 24 cm tin. Fill with chicken, egg mixture, almonds and sugar; fold pastry over.
