Steps

Brew · About 15 min

  1. Put 30 g filter coffee powder in the upper chamber of a clean metal coffee filter. Level gently; add 150 ml hot water. Cover and let drip for about 15 minutes.

    Check: Use hot water just off the boil. Do not pack the powder hard.

Heat milk · About 5 min

  1. Heat 300 ml whole milk in a saucepan for 4–5 minutes until hot. Watch closely.

Mix · About 2 min

  1. Divide the decoction between two cups. Stir in 20 g sugar and the hot milk.

    Check: Taste and adjust the decoction-to-milk ratio; filter strength varies.

Tips

  • Use coffee ground for a metal filter.
  • The listed total includes an estimated drip time.

Substitutions

  • Use oat milk instead of dairy milk, heated gently.
  • Omit sugar if preferred.

Storage

  • Refrigerate perishable food within two hours, or within one hour in heat above 32°C / 90°F. Store covered at 4°C / 40°F or below. Use within two days for this draft.
  • Reheat cooked dishes to 74°C / 165°F, stirring or turning for even heating. Serve cold salads, dips and chilled desserts directly from safe refrigeration.

Can I use instant coffee?

Why does it drip slowly?

Powder may be too fine or packed tightly.
