  1. Heat oven to 180°C / 350°F. Cut lids from 6 large tomatoes, 3 bell peppers, scoop tomato flesh and chop it.

Fill · About 10 min

  1. Mix tomato flesh with 250 g rice, 150 g onion, chopped, 60 ml olive oil, 20 g parsley, 15 g mint, 1 tsp salt. Fill vegetables two-thirds full and replace lids.

Bake · About 45 min

  1. Arrange with 400 g potatoes, wedged, 300 ml water, 30 ml olive oil around them. Cover with foil and bake 45 minutes, uncover and bake 25–30 minutes until rice is tender. Rest 10 minutes.
