Steps

Potatoes · About 60 min

  1. Bake potatoes from 800 g floury potatoes, 200 g plain flour, 1 egg, ½ tsp salt at 200°C / 400°F for 45–60 minutes until tender. Peel, mash and cool until warm.

Check: Look for this result: warm.

Shape · About 12 min

  1. Combine potato with remaining dough ingredients, using only enough flour for soft dough. Roll into ropes and cut 2 cm pieces.

Cook · About 15 min

  1. Simmer 25 ml olive oil, 10 g garlic, chopped, 600 g passata, ½ tsp salt, 15 g basil 15 minutes. Bring 2500 ml water, 1 tsp salt to a boil; cook gnocchi in batches until floating, then 1 minute more. Drain into sauce.

Check: The gnocchi is tender through the centre after floating; taste one before draining the batch.

  • Refrigerate perishable food within two hours, or within one hour in heat above 32°C / 90°F. Store covered at 4°C / 40°F or below. Use within two days for this draft.
  • Reheat cooked dishes to 74°C / 165°F, stirring or turning for even heating. Serve cold salads, dips and chilled desserts directly from safe refrigeration.
  • For sauces and soups, add a little water if thick and reheat gently. Crisp coatings soften after storage.
