Steps

- Cut the prepared vegetables into similar batons about 5 cm long and 1 cm thick.
- Put 240 ml grated fresh coconut, 2 green chilies, 1 tsp cumin seeds and 120 ml water, divided; more if needed in the blender.

- Add 240 ml ash gourd, cut into batons, 240 ml pumpkin, cut into batons, 240 ml Mangalore cucumber, cut and 240 ml raw plantain, peeled and cut.

- Cook over medium-low heat for 10–12 minutes.
Check: A fork should enter most pieces, with slight resistance remaining.
- If the pan starts drying, add hot water 2 tablespoons at a time.
- Fold in the coconut paste.
- Simmer for 5–7 minutes.

Finish without boiling · About 5 min
- Reduce the heat to its lowest setting.
- Fold in 240 ml plain yogurt, whisked.
- Warm for 1 minute without boiling.
- Turn off the heat.
- Add 1 ½ tbsp coconut oil and 12 curry leaves.
- Cover the saucepan for 5 minutes.
- Serve warm.
