Steps

Cook the base · About 8 min

  1. Heat 30 ml neutral oil. Cook 180 g onion, chopped for 6–7 minutes; add 15 g ginger-garlic paste and stir for 1 minute.

Brown the mince

  1. Add 650 g minced mutton, 1 tsp ground cumin, 1 tsp ground coriander, ½ tsp turmeric, ½ tsp chili powder, ¾ tsp salt. Cook for 7–8 minutes, breaking up clumps with a spoon.

Simmer · About 15 min

  1. Add 250 g tomatoes, chopped, 150 ml water, 120 g peas. Cover and simmer for 12–15 minutes; stir halfway.

    Check: Minced mutton must reach 71°C / 160°F. The peas should be tender.

Finish · About 3 min

  1. Add 1 tsp garam masala, 15 g coriander leaves. Simmer uncovered for 2–3 minutes until the sauce clings to the mince.

Tips

  • Use a spoon to break large clumps before they set.
  • Reduce the sauce if using keema as a filling.

Substitutions

  • Use minced lamb or beef; keep the 71°C / 160°F check.
  • Replace peas with small diced green beans.

Storage

  • Refrigerate perishable food within two hours, or within one hour in heat above 32°C / 90°F. Store covered at 4°C / 40°F or below. Use within two days for this draft.
  • Reheat cooked dishes to 74°C / 165°F, stirring or turning for even heating. Serve cold salads, dips and chilled desserts directly from safe refrigeration.
  • For sauces and soups, add a little water if thick and reheat gently. Crisp coatings soften after storage.

FAQ

Can I use frozen mince?

Thaw it safely in the fridge before cooking so it breaks up evenly.

Why is the mince grey?

An overcrowded pan steams meat. Use a wide pan and let moisture evaporate.

Can I omit peas?

Yes. The cooking time remains similar; reduce water slightly if the sauce is thin.
