Steps

Soften the vegetables · About 8 min

  1. Heat 2 tbsp olive oil in the pan over medium heat.
  2. Add 1 whole chopped red onion and 1 whole diced red bell pepper.
  3. Cook for 6–8 minutes, stirring often.

    Check: The onion and pepper should soften.

  4. Add 1 clove minced garlic.
  5. Stir for 30 seconds.

Simmer the sauce · About 15 min

  1. Add 1 whole diced tomato, 400 g canned crushed tomatoes, 1 tbsp tomato paste and 125 ml vegetable stock.
  2. Add 1 tsp paprika, 1 tsp cumin, ¼ tsp black pepper, ¼ tsp cayenne and ½ tsp salt.
  3. Bring the sauce to a gentle simmer.
  4. Cook uncovered over medium-low heat for 10–15 minutes, stirring every 3 minutes.

    Check: The sauce should thicken enough to hold a shallow well.

Cook the eggs · About 10 min

  1. Make one small well in the sauce for each of 4 whole egg.
  2. Crack each egg into the small bowl before sliding it into a well.
  3. Cover the pan.
  4. Cook over low heat for 7–10 minutes.

    Check: The whites and yolks should be set; no clear, liquid white should remain.

  5. If the eggs are still runny, cook covered for another 2 minutes before checking again.
  6. Turn off the heat.
  7. Scatter 2 tbsp chopped parsley over the eggs.
  8. Serve hot.
